The story

Le Coyote Paris: A Saloon-Style Small Plates Kitchen on Rue des Archives

The kitchen and its creator

Le Coyote operates on Rue des Archives in Paris as a compact venue serving small plates during daylight hours and shifting to evening drinks afterward. Chef Marine Gora founded the project after closing her earlier restaurant, Gramme 3, and now manages the entire floor herself. Her approach recently secured a place on the 2026 Le Fooding list, which highlights her ability to maintain consistent quality across a rapidly changing service model.

Room and atmosphere

Swinging saloon doors guide guests past a wall-mounted grandfather clock toward a space defined by fringed lampshades and exposed plaster. The deliberately stripped walls allow the soundtrack and steady chatter to fill the room without competing with the architecture. This mix of vintage fixtures and contemporary energy supports both quiet morning coffees and louder evening gatherings centered around small-plates tasting.

Signature bites and desserts

Early diners frequently request padrón peppers and other sharing-style small plates like a daikon preparation finished with anchovy and shiso. A smooth white bean dip garnished with caramelized onions and salsa macha pairs effectively with stuffed squash cooked in a gochujang and cancoillotte Mornay sauce. Sweet and savory snacks remain available until closing, particularly the chocolate chip cookies that originally built the chef’s reputation.

What’s the different between Marine Gora and eighteenth-century chemist Antoine Lavoisier? Everything, except the idea that nothing is lost, everything is transformed, whether in chemistry or on Rue des Archives. Proof in point: the radiant chef has now gone full cowgirl, transforming her former Gramme 3 into a saloon with velvet gloves, cowboy boots and queer flair. Riding high on her success, she now runs a pint-sized kitchen that’s a café by day, bar by night, in a setting that revels in contrasts, bringing together the good (swinging saloon doors, an old wall-mounted grandfather clock, fringed lampshades), the bad (stripped-back walls) and the rowdy (a loud playlist and howls of laughter). Depending on the mood, apéro -time quickdraws see some unbridled gildas blazing out the kitchen (Padrón peppers, olives and blue cheese or daikon, anchovy and shiso), a white bean dip topped with caramelized onions and salsa macha, stuffed squash with a gochujang and cancoillotte Mornay sauce, or even a blood orange flan. And for the final yeehaw? Sweet and savory snacks are (almost) available at any time of day, including the famous cookies that made Gramme 3 so beloved in the first place. · Agatha Crispy
