The Vitellotonnato 2.0 separates itself from the classic version by pairing lightly fried veal medallions with a smooth tuna foam. Sea bass tartare arrives alongside bitter lemon foam and sea hare roe for a sharp coastal finish. These Italian cuisine staples rely on precise temperature control rather than heavy sauces. Heartier plates feature Swiss salmon or lamb served over spinach fettuccine with pistachio cream and smoked burrata.
