The story
Since 1992, chef Olivier Gaslain has been at the helm of Le Villaret in the 11th arrondissement. A native of Granville in Normandy, he brings a distinct coastal sensibility to his cooking, sourcing fish directly from the Norman and Breton coasts and selecting seasonal produce from local market gardeners. The kitchen focuses on traditional, terroir-driven French cuisine, made from fresh ingredients and prepared in-house.
