The story
Once the buffet of Meudon’s train station, L’Escarbille has transformed the space into a restaurant that feels like a quiet escape from Paris—even though the city is just ten minutes away. The building retains a subtle sense of its past, but today its identity is defined by the cooking of chef Régis Douysset and his team. With a terrace for fine weather and cosy, welcoming dining rooms, the setting is both relaxed and polished.
Chef Douysset’s cooking is described as precise and generous, rooted in traditional French gastronomy yet clearly of the moment. The menu follows the seasons, spotlighting high-quality produce. One standout is the “Turbot rôti, endives caramélisées, émulsion à la citronnelle”—a dish that exemplifies the kitchen’s balance of classic technique and bright, modern flavours. L’Escarbille’s wine list is equally thoughtful, with interesting selections that complement the cuisine.
The restaurant’s commitment has been recognised with a Michelin 1 Star, awarded for “high quality cooking.” Beyond the main dining room, private salons are available for business lunches, seminars, or romantic dinners. Chef Régis and his wife Annette Douysset personally ensure every guest feels well cared for, whether in the main salon or a quieter corner. L’Escarbille delivers classic cuisine with a modern touch, just outside Paris.
