In the quiet streets of Paris’s 7th arrondissement, L'Escudella brings a chef-driven vision of modern cuisine to life. This is the first restaurant of Rémi Poulain, a cook whose career reads like a tour of Parisian fine dining: chef de partie at Le Quinzième under Cyril Lignac, stints at the Prince de Galles and Relais d’Auteuil, then sous-chef at Laurent and La Tour d’Argent. After leading kitchens at Sinople, Caméléon, and Christine, he opened L'Escudella to put his own stamp on bistronomie.
Poulain’s cooking is built on rigour and a deep respect for fresh, seasonal produce. The menu changes monthly, offering a tight selection of three or four starters, mains, and desserts. Precision in cooking and bold flavours are the hallmarks, with everything made in-house. The chef’s signature dish is a pâté en croûte, a classic rendered with evident care.
The wine list is equally considered, featuring quality bottles and allocations from top domaines such as Amiot Servelle. The setting is relaxed and welcoming, with a sunny terrace and air-conditioned dining room.
