The story
On rue de l’Arbre-Sec, steps from the Louvre, Liquide brings a fresh take on the classic French tavern. Conceived by Matthias Marc and Stéphane Manigold, the restaurant calls itself a “taverne moderne” – a place where the warmth of a traditional bistro meets contemporary ambition. The dining room feels both convivial and refined, designed for unhurried lunches and lively dinners alike.
The menu is the work of Gaylord Merlet, formerly sous-chef at the acclaimed restaurant Substance. His cooking is described by the team as generous and inventive, built around standout ingredients and large-format dishes meant to be shared. While the carte changes with the seasons, the spirit remains constant: bold flavours, careful technique, and a palpable joy de vivre. The kitchen’s approach earned the restaurant a Michelin Recommended distinction in 2026, a nod to its confident, original voice in a city full of culinary heavyweights.
Liquide is open for lunch and dinner, Tuesday through Saturday, with outdoor seating when the weather allows. The atmosphere is lively but never rushed – the kind of place where a bottle of wine and a platter of something roasted can stretch into the evening. Whether you come for a quick midday meal or a long shared dinner, the restaurant’s guiding principles are clear: good appetite, good company, and no pretence.
