The story
Locomal occupies a sand-colored storefront on Rue de Charonne in Paris, where chef Jose Oviedo prepares traditional Mexican cooking. He manages a narrow open kitchen that spans the entire length of the dining room. Oviedo originally trained at El Nopal and Mokonuts before launching this independent concept alongside founders Moko Hirayama and Omar Koreitem. His station handles everything from baking fresh tortillas to steaming masa inside dried corn husks for tamales.
A recent inclusion in Le Fooding acknowledges how the team balances casual street food with structured dining. Guests arrive at seventeen hundred hours for micheladas and baked tortilla chips paired with the salsa of the day. The kitchen transitions to a five-course tasting menu once dinner service begins, letting diners sample several Mexican preparations in a single visit. Curated wines rest beside proper mezcal and house sauces to complete the table.
