Celebrated table
The story
At Lolo cave à manger in Paris, the kitchen delivers contemporary French small plates under the direction of Maud Saddok. She brings techniques refined during her tenure at Goguette and Fripon to a menu built around precise flavor pairing. Her approach centers on seasonal produce like Greyzini zucchini and hand-cut veal. This disciplined French cooking avoids heavy sauces in favor of clean layering.
The menu highlights duck heart croquettes dressed with jalapeño mayonnaise and tender veal tartare finished with apricots and Thai basil. Grilled octopus arrives resting in a robust rouille while glazed tomatoes carry a light tonnato base dotted with fresh shiso. A simple raspberry and cherry pavlova closes service without unnecessary embellishment. Each plate demonstrates how controlled heat and careful seasoning define the dining rhythm here.
Loïc Minel and Christophe Juville designed the space using crimson tiles, a vermillion bar, and bright red neon fixtures to create a vivid neighborhood gathering point. Their cellar focuses on low-intervention wines that pair naturally with the French kitchen’s sharp plating. Le Fooding recognized this combination by listing the venue in their 2026 edition. Patrons settle into the compact seating area to watch the open kitchen work through its carefully timed courses.
