The story
Alexis Voisenet, former right hand of Guy Savoy and creator of his dishes, opened Maison Avoise in late 2024. His path included stages with Yannick Alléno, Jean-François Piège, and a stint at L'Oiseau Blanc where he helped earn a Michelin star. Now, in the old fort of Issy-les-Moulineaux, he expresses his own gastronomic vision – a homage to classic French cuisine yet graphic, lively, and of its time. Already awarded a Michelin star and Gault&Millau's Young Talent Île-de-France, Voisenet proves that the suburbs can host great culinary odes.
Housed in the former gunpowder casemates, Maison Avoise contrasts raw stone vaults with a white Carrara marble counter. The open kitchen features an onyx pass, while a green mural and staff in green bring the rooftop garden inside. Two dining rooms and a wine bar (cave à manger) with charcuterie and cheese aging fridges offer a relaxed atmosphere. Each room opens onto a terrace.
Voisenet's modern cuisine follows a fixed structure of three starters, three mains, three desserts, each with a clear theme like La Nature Vivante (a classic on leeks), La Madrague (partially raw scallop), or La Carnée (chicken boudin blanc Rossini). The signature ris de veau is a true heritage of his journey. Menus range from a four-course lunch at €64 to an eight-course Avoise menu at €135, with wine pairings available. The carte evolves with daily arrivals, always letting the product speak clearly.
