A Chef’s Own House

Maison Dubois is the deeply personal project of Chef Arthur Dubois, a chef whose training reads like a who’s who of French gastronomy. He began at the legendary Bistrot de la Marine with Jacques Maximin, then worked under Éric Frechon and spent eight years as second to Pierre Gagnaire at Balzac. In the 8th arrondissement, he has opened “his house” for a clientele of connoisseurs searching for singular gastronomic moments.

The restaurant occupies just six tables, plus a private salon named “Jacques Maximin” that seats up to six for confidential tastings. This intimate scale is deliberate — it allows the kitchen to do meticulous work while preserving the spirit of a home. “We wanted a calm place where the client can take their time if they wish,” says Dubois.

The Cuisine

The cooking at Maison Dubois is refined modern cuisine that harmoniously blends classicism with a pursuit of flavour that lets the product speak. All bread is made on site, and every ingredient is worked in-house. The kitchen favours short supply chains and sustainably farmed produce. “We want a cuisine where you really taste the product, through different propositions,” Dubois explains. “I absolutely wanted to offer a generous menu that accompanies two menus.”

This philosophy has not gone unnoticed. In 2024, Dubois was named Grand de Demain by Gault&Millau, and the restaurant earned a Michelin star in the 2026 guide, which recognises “high quality cooking.”

The Team and Atmosphere

Dubois speaks warmly of his brigade: young, talented, tightly knit, and deeply involved in the project. Each member brings their personality to the dishes and desserts. The dining room is designed to be a respite — a place where the only agenda is the pleasure of the table. Open for lunch and dinner Monday through Friday, Maison Dubois offers a rare, unhurried experience in the heart of Paris.
