The story

Maison Paris – Chef Sota Atsumi’s Modern Cuisine in the 11th

A House in the Heart of Paris

Chef Sota Atsumi dreamed of a place where guests would share smiles between carefully crafted dishes, served by a team that takes genuine pleasure in hospitality. That vision became Maison, a restaurant housed in a former wine cellar and coffee machine repair workshop on a quiet lane in the 11th arrondissement. The building has been restored from the ground up, its character preserved through century-old terracotta tiles and an eight-metre-long solid wood communal table that anchors the main dining room. The open kitchen faces the guests, reinforcing the feeling of being welcomed into a private home.

The Experience

The menu changes with the seasons and the chef’s inspiration. Lunch is a five-step affair at 85 euros, while dinner unfolds over seven steps for 165 euros. A carefully selected wine pairing is available for both – 65 euros at lunch, 110 euros at dinner. The wine list itself is curated with the same attention to harmony that guides every choice, from ingredients to materials. The restaurant seats up to forty people, with counter dining as an option for those who want a closer view of the kitchen.

Recognition

Maison’s approach to modern cuisine has earned it a place in the Michelin guide, receiving a Recommended distinction for 2026. It is a quiet acknowledgment of the care that goes into every detail – the sourcing of produce, the composition of each plate, the atmosphere of the room. Chef Atsumi and his team opened the doors in September 2019, and the restaurant has since become a destination for those seeking a genuinely personal dining experience in Paris.

Tired of working for the big names (Robuchon, Troisgros ), Sota Atsumi, the talented lover of forgotten bistros (Vivant, Clown Bar ), has reinvented his lovely restaurant in the center of Paris with help from architect Tsuyoshi Tane. Partitioned rooms, flame-red tomette tile floors climbing up to the mezzanine level with a long wooden communal table and a bar with views of the powerful flames and steam escaping from the kitchen. The night we went, the masterful menu featured: a series of amuse-bouches, including creamy roasted chestnut velouté with a honey-roasted chestnut and a prawn, some bucolic quince with lemon verbena, sunfish in puff pastry, fermented tomatoes and watercress; followed by Eden-esque raw apple enchanted by pistachio, quince, cilantro and fromage frais; then… scallops on the shell barely touched by the embers, plus broccoli stuffed with anchovies; a tearfully delicious trio of eel ravioli with fermented potatoes, egg yolk and porcini mushrooms: a fatally good millefeuille composed of thin crepes, caramelized onions, chard, sorrel and grilled black trumpet mushrooms; transcendental lobster with Savagnin and Comté cooked until golden in the fireplace – seared on the outside, almost raw on the inside, for a sumptuous roasted sashimi effect; also untouched and veiled only by fire, grilled red mullet with sea urchin, baby leeks, Px sauce; explosively flavorful lamb with lamb’s lettuce, radicchio, artichokes and a spellbinding reduction. Just as delicious and classy, a beautiful crème brûlée carved into a poached pear, with an apricot reduction, olive oil ice cream, honey and basil oil, before ending the meal with a heady hot chocolate infused with chestnut liqueur. // Renaud Fuego
