The story
Chef Maximilien Kuzniar opened Mano in 2020 in the Paris suburb of Boulogne-Billancourt, bringing a distinct vision of modern cuisine rooted in the bright, acidic flavours of Latin America. His signature dish, the ceviche, speaks directly to that influence: fresh, sharp, and built on ingredients sourced daily from the market. The restaurant quickly earned recognition, receiving the Gault & Millau “Young Talent” prize in its opening year and, more recently, a Michelin Recommended distinction.
Kuzniar trained under Jérôme Banctel at La Réserve and Juan Arbelaez, whose Plantxa kitchen was where he discovered his affinity for Latin American flavours. He worked as a private chef around the world before settling at Mano. The dining room seats 34, with a terrace for warmer months.
At lunch, the chef offers a market-driven carte with several choices, including vegetarian suggestions and daily specials. In the evening, the meal shifts to a blind tasting menu called “Le Kiff” – five courses at €69 that change according to the chef’s inspiration. The “P’tit Kiff” tasting menu in four courses is also available. Both are available on request at lunch.
Mano also offers private event catering, from small dinners to large-scale receptions, reflecting the chef’s background in private chef services. The team takes reservations for private parties and provides a takeaway service. Gift cards are available.
