The story
At 82 boulevard Murat, Marius brings the spirit of the coast to the 16th arrondissement. The restaurant is led by Jérôme Vigato and Romain Dubuisson, backed by chef Jean-Pierre Vigato, and their shared ambition is clear: to elevate the finest fish, crustaceans, and seafood. Starters include a silky fish soup with a smooth rouille and toasted spelt bread, a sashimi and tartare of tuna with cucumber and ginger, and a barely-there daurade with caviar lime and drops of iodine. Mains span a poached skate with capers, lemon, and brown butter, a naturally cooked cod with a riot of market herbs, and a “Colbert” whiting with fried parsley and a light tartare sauce. For two or more, there are whole fish – wild sea bass, octopus, roasted turbot – depending on the day’s landings. The wine list and accompaniments are chosen to match the sea’s subtlety.
