A Homecoming at Rue d'Assas

When Hélène Darroze reinvented the address at 4 rue d’Assas, she did so with a clear intention: to return to her roots. The restaurant is named after Marsan, the village in the Landes region where she was born and where her story began. This is not a stage for grand gestures, but a personal space where the chef focuses on the essential: the producers who have always inspired her, the "right and true" product, and recipes that sublimate without cheating. The result is an instinctive Modern Cuisine built on tastes and stories.

Three Ways to Dine

Marsan offers three distinct experiences. In the elegant Dining Room, the menu changes daily. Here, dishes tell a new story: Charente oysters meet caviar and Béarn corn beans; blue lobster from Brittany is perfumed with hay alongside Bordeaux ceps; a Saint-Jacques recalls a journey to India with Tandoori spices and fresh coriander. The baba is soaked in an Armagnac from the chef’s brother’s personal collection.

For a more immersive experience, the Chef's Table on the first floor places seven guests at the heart of the kitchen, witnessing the precise ballet of the cooks. Downstairs, the Sharing Table offers a convivial, high-flying meal around a large contemporary farm table, surrounded by an impressive wine list. This layered approach, from the intimate to the communal, reflects a kitchen that is both demanding and alive—a philosophy that has earned the restaurant two Michelin stars for its excellent cooking.
