The story
In the heart of the Marais district, Matka is the deeply personal project of chef Piotr Korzen. Born in Krakow in 1995, Korzen left Poland to train in France, honing his skills at prestigious addresses including Sur Mesure by Thierry Marx (two Michelin stars). In 2024, he opened his own restaurant, naming it Matka – “mother” in Polish – as a homage to the woman who passed on his passion for the flavours of his native cuisine.
Korzen’s mission is to challenge preconceptions about Polish gastronomy, proving that it can be both authentic and refined. He combines the bold, comforting flavours of Slavic dishes – Borscht, Pierogi, Gołąbki – with the precision of French technique. Ingredients are sourced from local suppliers such as Terroir d’Avenir and Ferme de Clavisy, ensuring freshness and seasonality. The menu changes regularly; a 5-course dinner is offered at €69, available every evening and weekend lunch, with vegetarian and lactose-free options. The result is a contemporary take on Polish cuisine that feels both familiar and surprising.
The restaurant’s elegant yet intimate setting, housed in a historic building with stone walls and a ceramic stove, evokes the atmosphere of a Polish inn. The quality of the dining experience has been recognised by the Michelin guide, which awarded Matka a Recommended status in 2026. This accolade places Korzen among the rare pioneers bringing Eastern European gastronomy to the Parisian dining scene, earning him further recognition as a Young Talent by Gault&Millau 2024. The wine cellar is carefully curated, and the space can be privatised for events.
