Neige d'Été

In the 15th arrondissement, chef Hideki Nishi runs Neige d'Été with his wife Nirei. The restaurant, which earned a Michelin star in 2016, is a quiet expression of the chef's dual heritage: French technique filtered through Japanese precision.

Nishi grew up in Matsusaka, Japan, in his family's restaurant. After moving to Paris, he trained under Meilleurs Ouvriers de France Philippe Legendre and Eric Briffard at Taillevent and the Georges V. He opened Neige d'Été in 2014, a place where he could present his gastronomic interpretation of French cuisine—one that respects seasons, product, and Japanese know-how.

The dining experience follows a preset menu with no à la carte choice. The chef works primarily with sea products. Options range from a four-course discovery menu at 100€ (Monday–Thursday) to a six-course Neige d'Été menu at 155€, and a seven-course Prestige menu at 255€ (advance booking required). A wine pairing selection, including sake, is available.

Neige d'Été's cooking is described as extremely rigorous and elegant, with a great sense of detail as its signature. The atmosphere matches the cuisine: understated, precise, and welcoming.
