Guillaume Sanchez, a Bordeaux native born in 1990, came to NESO after a transformation. His cuisine is described as “engaging, light, and free” – a style rooted in French tradition yet liberated from its obligations. The kitchen practices a sustainable approach, combining the oldest culinary methods (vegetable fermentation, cold steam extraction) with today’s technologies. The result is a contemporary French cuisine that feels both rooted and restless. Michelin, awarding the restaurant one star in 2026, called it “a fiery and passionate cuisine, brimming with imagination and technical skill.”
