The Kitchen & Dough

Julien Cohen opened Pizza Chic in Paris in 2008 to serve a refined version of Italian cuisine. His technique relies on lightly fermented dough that bakes slowly in a wood-fired oven. Childhood holidays spent around fresh mozzarella and pasta shaped his straightforward approach to the craft. The kitchen treats each topping as a distinct element, keeping the focus on texture and provenance.

The Dining Room

A glass storefront frames a space defined by black and white floor tiles and engraved iron plaques. Hanging bulbs cast light over white wall panels and crisp tablecloths. Rust-stained embossed metal tins line the walls, grounding the Saint-Germain-des-Prés address in quiet industrial character. The dining room carries the scent of baking dough throughout service, a detail that helped Le Fooding list the restaurant for 2026.

Signature Pizzas

Twenty different Italian pies rotate on the menu, but two remain consistent favorites among regulars. The classic Marinara features a crisp base topped with cherry tomatoes, taggiasche olives, and Mediterranean anchovies. Another standout combines rosemary with slices of lardo di Colonnata, creating a rich white pizza that balances fat and herbs. Dessert rounds out the meal with a simple Nutella pie that asks for little more than a fork.

Black and white tiled floors, engraved iron plaques on the walls, white tablecloths, bare light bulbs… Welcome to Julien Cohen’s ( Grazie , Professore, Quindici) classy establishment, where rounds of lightly fermented dough get topped with carefully sourced ingredients making for some fatally chic pizzas. For us, the day we went for lunch, after a Piedmont beef carpaccio marinated in honey and tea: a Marinara with crisp dough and a plump crust, copiously topped with cherry tomatoes, taggiasche olives and Mediterranean anchovies – one of twenty-some options, including the mouthwatering Chic white pizza, combining rosemary and lardo di Colonnata from Fausto Guadagni. For dessert? Opt for the comforting Nutella pizza and you’re sure to have a good nap that afternoon! // D.C.
