The story
At the Park Hyatt Paris-Vendôme, Pur' - Jean-François Rouquette is a restaurant that has been reimagined. The dining room is the result of a collaboration between the Michelin-starred chef and artist-architect Hugo Toro, who designed every detail, from the napkin rings to the candlesticks. The atmosphere is one of intimate exclusivity, a confidential table on the Place Vendôme.
Jean-François Rouquette’s path began in the kitchens of his family’s hotel-restaurant in the Paris region. After formative years at the Hôtel de Crillon, the Grand Véfour, and Taillevent, he opened La Cantine des Gourmets in 2006, earning his first Michelin star. Now at Pur', his cuisine is described as a sincere score, inspired by terroir, nature, and the seasons. The menu is in perpetual movement, changing with the daily arrival of ingredients.
He works alongside deputy chef Ai Okabayashi, a Japanese-born chef who has been his right hand for 15 years, bringing precision and refined technique to the kitchen. Pastry chef Naraé Kim, named Gault&Millau's Pastry Chef of the Year 2024, completes the brigade, creating desserts that celebrate raw, healthy ingredients with subtlety and originality. For a privileged few, the Chef’s Table offers a direct view of the action, seating just six guests.
The modern cuisine at Pur' is built on lightness, favouring reductions, emulsions, and infusions over cream and butter. The kitchen explores unexpected flavours, always guided by a return to the essentials. This is a place where the quality of the product dictates the direction, and the talent of the team brings it to life.
