At Pur’ in Paris, Jean-François Rouquette serves a refined version of French cooking that deliberately avoids heavy sauces. Born in Aveyron and raised watching his parents run a family hotel restaurant, he learned early that generosity matters more than excess. His modern approach strips away cream and butter, relying instead on precise reductions, clear emulsions, and delicate infusions to highlight seasonal produce. Working alongside his deputy Ai Okabayashi for fifteen years, the kitchen operates as a single intuitive unit where every sauce passes through both their hands.
The dining room reflects a quiet partnership between Rouquette and artist and architect Hugo Toro, who designed every surface and service object from scratch. Napkin rings, knife rests, butter pots, and dinner candles were drawn by hand to match the scale of the Place Vendôme location. Guests can reserve the Table du Chef, an intimate six-seat counter positioned directly above the active brigade. This layout turns the kitchen into a visible workshop where technique dictates the pace of service.
Menus shift daily according to supplier arrivals, keeping the French gastronomy strictly tied to market availability.
