The founding team and kitchen technique

Rambo arrived in Brussels in January 2021 as the capital’s first dedicated smash burger destination, founded by Xavier Chen, Sadri Rokbani, and John Prigogine. The trio leveraged their background running established neighborhood spots to build a streamlined operation focused entirely on meat and fire. Fresh Black Angus patties hit a blazing hot griddle immediately upon order, pressing the beef flat to maximize surface contact. That precise technique earned the kitchen a spot on the Le Fooding guide, which praised the unpretentious setup and consistent results.

Signature burgers and side selections

The kitchen keeps the menu tight so every component lands correctly. The Classic features a thin Black Angus patty layered with melted American cheese, raw white onion, gherkins, ketchup, and sweet mustard on a lightly buttered potato bun. Guests seeking extra crunch can switch to the Special version, which swaps the condiments for crisp lettuce and a house-made secret sauce. Both options pair well with standard fries or sweet potato cuts, while vegetarian diners can request a Beyond Meat patty prepared separately on the grill.

Interior design and dining space

Inspired by vintage Los Angeles American-style burger joints, the Washington location in Ixelles strips away unnecessary decoration to highlight the cooking process. Exposed concrete walls, natural wood counters, and brushed aluminum fixtures create a clean backdrop for the open kitchen line. The layout accommodates quick service without sacrificing comfort, offering both indoor tables and outdoor seating for warmer months. This straightforward approach lets the food remain the focal point rather than competing with loud décor.

To counter the feeling of post-lockdown gloom, John Prigogine and Xavier Chen (Old Boy, Lil Boy) pulled out the big guns, exploding onto the scene with Rambo, the first 100% muscle smash burger spot in the capital. At their Châtelain base camp, you’ll find nothing but very pure (concrete, wood, aluminum) and very good things, in three variations: a classic Black Angus patty smashed on the griddle (for a thin, tender and caramelized steak, all in one) and placed in a light, buttery, grilled potato bun with ketchup, sweet mustard, gherkins, raw white onion and bright orange American cheese; or the Special, pimped out with a secret sauce and crunchy lettuce; or the Beyond Meat patty for veg-lovers. All made to perfection and to be devoured without dropping your jaw or dirtying your tee-shirt. Any sides? Fries, Mickey D’s style (aka not homemade), extra crispy nuggets and make-your-own sundaes.
