At its helm is Chef Manuel Martinez, elected Meilleur Ouvrier de France in 1986. After nine years at the three-Michelin-starred Tour d’Argent, he purchased this address in 1996. His approach is one of rare virtuosity: he strips away the nostalgic, dusty trappings of tradition and inscribes it in an elegant modernity. For Martinez, the obsession is truth—in the clearest expression of meticulously selected produce. This dedication has earned the restaurant a Michelin star, a recognition it continues to hold.
Seasonal inspiration guides the daily-changing Carte Blanche menu. Among the year-round signatures that have built his reputation are the ravioli of lobster and foie gras with a cèpe cream, and the classic bar quenelle with mushroom mousseline and a champagne glaze. Another emblematic dish is the Challandais duck from Madame Burgaud, roasted with cherries and served with a second service of duck tourte with foie gras.
