The story
Just steps from the Bastille, Restaurant H occupies a mini-écrin with a retro-futuristic feel – think pop art, Tom Dixon lighting, and deep petrol-blue armchairs. The atmosphere is guided by the identity of the place: warmth, escape, and sincerity resonate at every turn, from the materials to the music and even the scent.
Hubert Duchenne grew up in Normandy before his passion for cooking led him to Paris’s Ferrandi school. Alongside his studies, he learned from some of France’s most celebrated chefs: Alain Ducasse, Jean-Louis Nomicos, and Olivier Nasti. After graduating, he joined Jean-François Piège for the opening of Maison Thoumieux, then spent three years as second to Akrame Benallal, helping to form the team for a new venture in Hong Kong.
In 2015, Duchenne was named Young Talent by Gault & Millau. Months later, he earned a Michelin star, becoming one of the youngest starred chefs in Paris and one of the most affordable. That star remains, a mark of high-quality cooking that he continues to honour.
The chef selects the best products and composes menus based on daily arrivals and the seasons. Two tasting journeys are available: the Menu Itinéraire, served in five courses at €105, and the Menu Évasion, seven courses at €130. Each can be paired with a wine accompaniment – €75 for the shorter menu, €90 for the longer – or chosen from the wine list. The cooking is guided by nature, simplicity, and what the chef calls “mise en saine” – a clean, health-conscious approach that never sacrifices depth of flavour.
