Sammy and Joe brings honest American cooking to a quiet corner of Paris on Rue du Chemin Vert. Former pastry chef Gaëlle Daubord left the Chambelland bakery to focus entirely on bun craftsmanship and quick lunch service. She bakes every loaf by hand, using that same dough discipline to build sandwiches around crisp lettuce, ripe tomatoes, and sharp cheeses.

The menu and flavors

The kitchen treats familiar American diner fare with careful attention to texture and balance. A classic BLT gains depth from a house sauce blending tomatoes and cornichons, while a side of creamed corn carries a pinch of homemade garlic salt. Guests often order the vegan option featuring sesame roasted zucchini and arugula, or the simple egg sandwich layered with cheddar and pickles. Sweet finishes arrive as peach apricot rosemary tarts or dense caramel oat bars.

The room and atmosphere

Formica chairs and framed prints from contemporary artists line the walls, creating a relaxed space that feels more like a neighborhood studio than a commercial eatery. Hip hop plays quietly underfoot as customers wait for their orders or sit down for a swift midday meal. The layout stays intentionally compact, keeping the focus on the counter where Daubord assembles each plate. This modest setup delivers American-style comfort without pretension, earning quiet recognition from Le Fooding for its straightforward approach to everyday food.

Long live the humble sandwich! A former pastry chef at the Chambelland bakery and a devoted bun enthusiast, Gaëlle Daubord keeps busy in her small coffee shop (Formica chairs, drawings and photos by American artists, hip-hop playing in the background), carefully crafting quick lunches on homemade bread. Deserving of high praise the day we went for lunch: a classic BLT taken to the next level with a magical sauce made with tomatoes and cornichons, served with a fresh cucumber, yellow melon and mint salad, or creamed corn with homemade garlic salt. Other options that caught our eye: the vegan sandwich, which squeezes sesame-roasted zucchini, marinated cucumber, arugula and green sauce into white bread; the egg sandwich with cheddar, mayo and pickles; and the grilled cheese sandwich, of course. Craving something sweet? There are mouthwatering cookies, tender carmelitas (chocolate and caramel oat dessert bars) or, for us, a peach, apricot and rosemary tart devoured in the blink of an eye. // Eric Taylor
