An Intimate Setting on the Panthéon’s Slopes

Perched on the slopes of the Panthéon, Solstice is a discreet 18-seat dining room for gourmets and discerning palates. Chef Eric Trochon, a Meilleur Ouvrier de France, spent more than a decade as the culinary ambassador for Hermès, and has travelled widely. In this intimate, modern space—design furniture against raw walls—he crafts a graceful cuisine that marries French gastronomy with ingenuity and a masterful command of sauces.

French Technique, Japanese and Korean Accents

The Michelin inspectors, who awarded the restaurant one star, highlight Trochon’s cooking as “French with Japanese and Korean touches.” The menu evolves with seasonal arrivals from producers. At lunch, a three-service menu (95 €) might begin with a velouté of Helianti with hazelnut praline and black truffle, followed by a choice of line-caught sea bass with caviar, blue lobster with a coral-kimchi sauce, or veal with myrtle sauce. The signature Grand Vol-au-Vent, rich with foie gras, is available for two. Dinner offers the five-service “Solstice d’Été” (195 €), featuring dishes like ikejime sea bass with verbena-cresson pulp, and blue lobster poached in lobster butter with its modest parts in a gyoza. For the full experience, the eight-service Omakase (270 €) is a bespoke journey where the chef’s creativity takes the lead—game dishes like Lièvre à la Royale and Vol-au-Vent with sweetbreads are available on request.

A Curated Wine Pairing

Chef Trochon and his wife, the sommelier, have chosen a short, precise wine list where each vigneron specifically complements the menu. Pairings are offered at 60 € for three glasses at lunch, 95 € for five at dinner, and 145 € for the Omakase. Two seats at the counter facing the kitchen let guests watch the action up close.
