At the crossroads between two small streets in Paris’ oldest Chinese neighborhood ( yes, this is where it all began, and not in the 13 th ), this Vietnamese joint run by a Cambodian family has been managing the crowds since 2005… Every day at lunch, addicted locals and mainly Asian tourists patiently wait for a chance to fill up on bun bo xao or pho, both of which are served in two sizes (L and XL). The bun bo xaos are a well mastered classic: generous amounts of vermicelli rice noodles, lettuce and fresh herbs, delicious marinated beef, sautéed onions and crispy yet tender spring rolls, all flooded in nuoc-mâm sauce. The pho, with its rice noodles, chives, soy beans, sliced beef and meatballs bathing in a fragrant broth, is incredibly reinvigorating too! // T.V.X.
