The Generational Shift

Thuy Long Paris continues its run of authentic Vietnamese cooking after three decades of steady service. Madame Thuy recently passed the kitchen to Dieu Linh Nguyễn, a transition that secured the venue a listing in the 2026 Le Fooding guide. Dieu Linh preserves the original name while introducing curated ethnic fabrics throughout the dining room. The family legacy now supports a streamlined approach to Thai preparations alongside classic Asian recipes.

A Refined Seasonal Menu

The kitchen favors a compact list that highlights precise technique over extensive variety. Guests can order a fresh summer roll packed with lemongrass marinated beef and crisp herbs. The beef pad thai arrives with hand cut rice noodles tossed in a bright tamarind base alongside seasonal vegetables. Each plate reflects careful attention to balance and traditional preparation methods.

Textiles and Traditional Craft

Wooden counters and woven wall hangings create a relaxed environment for casual meals. Madame Thuy moved her artisan crafts and vintage cooking tools to a new project, leaving behind a space designed for focused conversation. Dieu Linh arranged the remaining pieces to frame the open kitchen without cluttering the floor plan. Patrons often finish their meals with a simple banana tapioca cream served in small ceramic bowls.

The hand of Dieu ? After 30 years of hard work at this nice little Vietnamese joint, Madame Thuy has handed over the reins to Dieu Linh Nguyễn. The restaurant’s name hasn’t changed but the place’s aesthetic has been given an update. Madame Thuy has taken her artisan crafts and traditional instruments with her, as Madame Nguyễn has brought in a collection of ethnic fabrics. The menu, which is now very short, focuses on pan-Asian traditions (Vietnam, Thailand, Japan). The night we went, we had a plump summer roll filled with lemongrass-marinated beef (€5.40); a flavorful beef pad thai (fresh rice noodles sautéed with tamarind sauce, vegetables and lemon, €12.90); and a banana tapioca cream for dessert (€4.50). // D.C.
