Celebrated table
The story
Touki Bouki brings a distinctly African-inspired bistro concept to the Parisian neighborhood of Belleville. Chef Étienne Biloa curates a rotating roster of skilled cooks to execute his vision, while pastry chef Adélie Vernhes shapes the menu’s flavor profile. Her Afrodisiac plates anchor the kitchen, blending West African techniques with French pantry staples. This collaborative model keeps the cooking grounded in seasonal rotation rather than rigid tradition.
The menu leans into African cooking through dishes like beef cheeks braised in tiep or ndolé served alongside smoked sausage and mashed potatoes. Pan-fried palourde clams arrive with mussels poached in coconut lemongrass broth, accompanied by a light tempura garnish. Slow-roasted pork belly rests on ginger-infused bases, always paired with caramelized plantains and a tangy sauce chien. Dessert shifts to a dense semolina cake poured with local honey and finished with a slab of softened butter.
The dining room sits above the street in a compact layout that balances warmth with playful decor. Guests gather around shared tables under low ceilings, creating an intimate setting for extended meals. This unpretentious environment earned the restaurant a spot on the 2026 Le Fooding list, which praised its energetic approach to African bistro fare. Patrons often linger over the casual service while sampling inventive cross-cultural pairings.
