Trente-Trois occupies a discreet address on rue Jean Goujon in the 8th arrondissement, in the heart of Paris’s Triangle d’Or. With only seven tables, the dining room is intimate, with soft light and subtle materials that mirror the precision of the kitchen. The restaurant takes its name from the street number, and the experience here is one of quiet elegance.
Sébastien Sanjou comes from a family of restaurateurs spanning five generations in Bigorre. He trained at the lycée hôtelier de Biarritz and earned his first Michelin star at Le Relais des Moines in the Var at 31. In 2019, he opened Trente-Trois and achieved a Michelin star within six weeks—a rare feat that speaks to the clarity of his vision. His cooking is rooted in the South of France, drawing on Provence and the Côte d’Azur for inspiration.
Sanjou’s modern cuisine is built around exceptional produce: vegetables sun-ripened, herbs at their peak, fish and shellfish from sustainable fisheries, and meats chosen for their character. Olive oil, herbs, and citrus appear with regularity, but nothing is forced. Each plate is clear and direct, with layers of flavor that unfold naturally. Dishes such as green asparagus with lardo di colonnata and citrus sabayon, or roasted pigeon with Brussels sprouts and cocoa jus, demonstrate a kitchen that respects the ingredient above all. The result is modern cuisine that feels both luminous and essential.
Micaël Morais directs the dining room with warmth and precision, while the wine program—overseen by sommelier Xavier Thuizat—offers a carefully curated selection of 17 wines by the glass and three champagnes, with pairings designed to complement each course. The service is attentive but unhurried, encouraging guests to linger.
