The story

Urfa Dürüm Paris: A Fifteen Year Kurdish Kitchen Near Gare du Nord

The Charcoal Grill and Galette Technique

Urfa Dürüm in Paris draws regulars looking for honest Kurdish cooking along the Faubourg Saint-Denis. A wood charcoal grill anchors the far wall while a pita oven sits closer to the entrance. Cooks assemble orders directly over the flames, wrapping tender proteins in freshly stretched Turkish galettes. This straightforward setup keeps the focus entirely on heat and technique rather than elaborate plating.

Signature Sandwiches and Flatbreads

The kitchen builds its reputation around two specific items. The famous dürüm sandwiches feature grilled chicken or kefta skewers layered with red onion, parsley, and arugula. Staff deliberately skip fried potatoes to preserve the texture of the wrap. Lahmacun serves as the second house staple, delivering a crisp Middle Eastern pizza topped with seasoned ground meat, diced tomatoes, and fresh onions.

Fifteen Years of Steady Crowds

A stainless steel bar runs the length of the room, connecting the oven area to the main dining floor. Diners from varied backgrounds line up daily for this consistently busy establishment. The location earned a listing in Le Fooding after maintaining its pace for fifteen consecutive years. That enduring popularity reflects a simple commitment to consistent Kurdish preparation and reliable service.

This Kurdish spot has been open for the past 15 years – and it’s been full every day for each of those years! A diverse crowd lines up along the stainless-steel bar, which stretches out from the pita oven near the entrance to the wood charcoal grill at the other end of the room. Why? For the famous dürüm sandwiches, made on Turkish galettes right before your eyes and filled with grilled chicken or kefta skewers, red onion, parsley, arugula, and, best of all, no fries – that would be a sin! Not to mention the other house star, the emblematic lahmacun, a kind of Middle Eastern pizza topped with ground meat, tomatoes and onions. // M.S.
