The founding team and local roots

Vandal brings its focused sandwich craft to Paris near Buttes Chaumont park. Alix Devallois, Paul Landre, and Clara Woog combined their backgrounds in photography, fine dining kitchens, and community management to launch this neighborhood spot. Their deliberate approach to everyday food quickly earned a spot on the 2026 Le Fooding list for challenging conventional dining. High-end culinary training shows through in every careful preparation.

The kitchen and signature sandwiches

Every build centers on properly sourced bread and carefully balanced fillings. The chicken meatball sandwich features tender poultry simmered in a bright tomato base, topped with pickled peppers and shaved Parmesan inside a soft challah roll baked by Union Boulangerie. A spicy sardine variation layers seasoned fish with roasted root vegetables and a light sriracha aioli on crusty white bread. Both main options on the sandwich menu can be ordered as smaller plates.

The dining room and sweet finish

Guests gather around a single long table set against raw waxed concrete walls that reflect the quiet energy of the nineteenth arrondissement. The casual layout encourages conversation while keeping service efficient for quick takeaways or relaxed lunches. Meals often conclude with a warm apple crumble studded with toasted almonds and pumpkin seeds, served alongside a dollop of mascarpone cream. This thoughtful combination leaves a lasting impression without unnecessary complexity.

Here’s a sandwichery that’s earned its reputation as the neighborhood iconoclast! Just a short trail of breadcrumbs away from the Buttes Chaumont park, lovebirds Alix Devallois (a photo stylist) and Paul Landre (ex-Racines, Agapé and Le Petit Keller) have partnered up with Clara Woog (the former community manager at GiftShop) in order to shake up the surrounding area with their hearty and expertly crafted sammies. Sitting squarely around a communal table in a space done up with a lot of waxed concrete, the last time we went we opted for the Vandal Boulettes sandwich featuring some incredibly tender chicken meatballs drenched in a perfectly balanced tomato sauce, plus sweet pickled peppers and shaved Parmesan, all tucked into a plump challah-style brioche bun made by Union Boulangerie – with the option to dip it in homemade ketchup if you so please. FYI: “miniature” versions of the sandwich are also available for half the price, but only a third of the meatballs. Feeling more surf than turf? The Vandal Spicy Sardines sandwich compiles the aforementioned spiced fish with seasonal vegetables (carrots, beets, pickled radish, onion and turnips), fresh herbs and sriracha mayo in between two slices of white bread – much like the vegetarian sandwich with marinated eggs.
