Chef Sylvain Grosjean leads the kitchen with a philosophy of simplicity and precision. He works with high-quality ingredients sourced from short supply chains, letting each component speak. The menu changes regularly with the seasons and the chef’s inspirations, offering two tasting formats: the four-course Menu des Saveurs and the six-course Menu Dégustation. Both are built around signature dishes that balance technique and clarity—a hallmark of the modern cuisine that earned Villa9Trois a Michelin star.
The restaurant’s wine list spans over 200 references, with a strong focus on France’s finest estates. Sommeliers Romain and Amaury guide guests through the selection, which also includes a rare collection of Japanese sake. Beyond wine, the cellar holds one of the Île-de-France’s most extensive ranges of whiskies and rums—over 100 references from Scotland, Japan, India, Tasmania, and beyond, alongside classic bourbons and Irish whiskeys.
Villa9Trois is open Wednesday through Sunday for lunch and dinner. The private parking and wheelchair access make it easy to reach, while two private salons are available for business meals or celebrations.
