The story
Just steps from the historic centre of Pézenas, Le Pré Saint Jean has been a fixture for over twenty years. The kitchen, led by Chef Jean-Michel Sempé, focuses on French gastronomy built from authentic, seasonal ingredients. This commitment to quality and value earned the restaurant a Michelin Bib Gourmand, a mark of well-prepared food at a fair price.
A native of Toulouse, Chef Sempé began his career at the Crowne Plaza in his hometown before spending three years in the brigade of Michel Sarran. His first head chef position took him to Corsica, where he also met his wife. After a stint as a consulting chef in Mauritius for Gérard Garcia, he returned to the South of France in 2013 to work alongside his father-in-law, Chef Philippe Cagnoli, who then ran Le Pré Saint Jean. Nearly a decade later, the transition was complete, and Sempé now carries forward the same passion for the region’s terroir and cuisine.
The restaurant offers two main menus: Promenade (42 €) and Balade Gourmande (65 €), both changing with the seasons. Starters might include a Mediterranean sea bream carpaccio with cucumber and celery, or a pan-fried duck foie gras with cherry vinegar gastrique. Main courses such as pollock in a bread crust with Bouzigues mussels and Swiss chard, or a saddle of lamb stuffed with its own sweetbreads and Lucques olives, reflect a kitchen that respects tradition while adding its own refined touches. Desserts like a banoffee with vanilla and dulce de leche, or strawberries with fresh goat’s cheese from Mas Rolland, end the meal on a high note.
A lunch formula (32 €) is available on weekdays, and a surprise five-course menu (85 €) can be ordered for the whole table. Dietary needs are accommodated on request.
Maître d’hôtel Christophe Libes, a local who has been welcoming guests for two decades, leads the front-of-house team. Alongside a brigade of young cooks and apprentices, the restaurant maintains a warm, professional atmosphere where the focus remains on the food and the experience.
Le Pré Saint Jean is open for lunch and dinner Tuesday through Saturday (closed Thursday evenings) and for lunch on Sunday. It is closed on Mondays and for a few days around 1 May. Bookings are recommended.
