The story
MDL le Bistrot is the second address of chef Matthieu de Lauzun, opened with his wife Marie‑Laure. The idea was simple: create a restaurant “à quatre mains,” a place where the couple could cook and host together. Located in the village of Caux, just outside Pézenas in the Hérault, the bistro offers a more informal counterpart to the chef’s Michelin‑starred Restaurant de Lauzun. The name says it all: sharing comes first.
Matthieu de Lauzun trained in some of France’s most respected kitchens – with Michel and Sébastien Bras, Paul and Marc Haeberlin – and spent years cooking in Japan, Thailand, Taiwan and Morocco. Those experiences shaped a cuisine that is boldly flavoured and deeply personal. He earned his first Michelin star in 2009 and has held it ever since, while Gault&Millau named him Jeune Talent in 2009 and Grand de Demain in 2014. At MDL le Bistrot, that same confident hand translates into Mediterranean‑inspired dishes served without fuss.
The bistro occupies a former priory in Caux, with outdoor seating for warm‑weather meals and a cool, air‑conditioned interior. It is wheelchair accessible and welcomes private parties. The atmosphere is relaxed – the kind of place where you can linger over a glass of wine from an interesting list, or bring the family for a Sunday lunch. Vegetarians are well catered for, and the kitchen stays open for both lunch and dinner.
