At Maison Zugno, the restaurant called Sève is the gastronomic heart of a house built on slow tourism and genuine hospitality. Chef Nicolas Zugno, who runs the kitchen alongside his wife Laurence, describes his cooking as a “cuisine vivante” – living, instinctive, and deeply rooted in the Jura terroir. After ten years of evolution, the former Table de la Maison Zugno was reborn as Sève, a name that evokes the sap of life and the vitality of seasonal produce.

Nicolas’s cooking is free and creative, yet always anchored in the local landscape. The restaurant’s Michelin Recommended status, awarded for 2026, recognises this commitment to a cuisine that is both personal and of the highest standard.
Nicolas and Laurence Zugno met at business school and shared a passion for hospitality. In 2016, at just 25 years old, they took over the Hostellerie des Monts de Vaux, a former coaching inn built in 1773 that had been closed for four years. They spent ten months renovating the property themselves, with help from family and friends, opening the hotel and bistro-style restaurant in 2017. Over the years, they refined their offering, closing for lunch to allow their chef to develop a more creative vision, and gradually elevating the cuisine to what it is today.
Dining at Sève is part of a larger stay at Maison Zugno, a secluded property set in a hectare of parkland near Poligny. The house offers just nine rooms and suites, designed as intimate refuges open to nature and silence. Guests can also enjoy a heated outdoor pool, hot tub, panoramic sauna, and relaxation areas. The entire experience is guided by a philosophy of slow tourism – a deliberate choice to offer space, time, and a deeper connection to the Jura countryside.
