An intimate welcome in medieval Poncin

In the picturesque, medieval village of Poncin, bordered by the Ain river and surrounded by the rolling vineyards and forests of the Bugey, AinTimiste feels less like a restaurant and more like a warm, personal invitation. Chef Jérôme Busset, whose cooking earned the house a Michelin star, runs a dining room that deliberately blurs the line between guest and family. The kitchen opens directly into the main dining area, allowing the chef to move naturally between his stove and his tables, checking in with a quiet attentiveness that defines the entire experience.

A cuisine that listens to the land

Chef Busset’s self-taught path—inspired by the cooking of his grandmother and shaped by years observing the service of great houses—results in a modern cuisine that is both free and instinctive. There are no rigid formulas. Instead, each plate follows the rhythm of the seasons and the daily market, with produce sourced carefully from a network of trusted suppliers in the region. Ingredients are allowed to speak, transformed with creativity but never obscured. The result is a tasting menu that reads as a personal story of texture, memory, and flavour, rooted entirely in the Bugey terroir.

A setting shaped by light and craft

The dining room itself is a study in understated warmth. A skylight floods the space with natural light, while dark wood, marble tabletops from a local Ain workshop, and vintage floor tiles create a grounded, tactile elegance. Every object has a story: the knives come from a cutler in Thiers, the ceramics from a friend and potter, Jean-Luc Froment, and the reclaimed-wood pieces from artisan Marline Chanel. This respect for French craftsmanship extends to the chef’s collaborations, including the work of photographer Delphine Delamain, whose images capture the colours and emotions of the kitchen.

When weather permits, the terrace becomes a small haven, shaded by vines and opening onto a quiet village lane. For more private occasions, a separate salon seats six. Whether indoors or out, the atmosphere remains the same: sincere, unhurried, and deeply connected to its place.
