A Restaurant Born from the Breton Light

In July 2022, chef Jules Rolland, then 27, and his partner Roxane Cartigny opened Nuance in Plomeur, a short walk from the wild coastline of Pointe de la Torche. The name reflects the shifting light that plays across the Breton horizon – a constant source of inspiration for a kitchen that draws equally from the sea and the land. Rolland, a passionate surfer and chef, brings a spirit of bold association to every plate.

The Team Behind the Experience

Roxane Cartigny and Louna lead the front-of-house, creating an atmosphere that balances elegance with genuine warmth. Guests are welcomed with attentive care, and the dining room’s convivial energy mirrors the precision of the kitchen. The restaurant earned a Michelin star in 2026, a recognition of its high-quality cooking and the team’s commitment to a memorable meal.

A Cuisine of Place and Season

Nuance’s modern cuisine is rooted in the products of Finistère. The menu changes regularly, driven by the chef’s inspiration and the rhythm of the seasons. Dishes weave together land and sea: an oyster with seille and fennel, scallops with chestnut and yuzu, or fish of the day paired with celery and chlorophyll. The evening menus – Suroit (62€) and Passero (119€) – offer a progression of bold, harmonious flavors. A shorter lunch menu (39€–52€, three or four courses) is served Thursday through Saturday.

Local Partnerships, Shared Values

Rolland works closely with local fishermen, oyster farmers, market gardeners, and foragers. Their rare, seasonal ingredients – seaweed, maritime herbs, fresh fish, and vegetables – are the foundation of each dish. This network of trusted producers allows the kitchen to transform each ingredient into something nuanced and distinct, true to the restaurant’s name.

Nuance is open Thursday through Sunday for lunch and dinner, closed Monday to Wednesday. The restaurant offers outdoor seating, parking, and wheelchair access. Reservations are made through the website.
