The story
At 11 rue de Verdun, in the center of Pontchâteau, chef Gilles Charpy and his wife Stéphanie run Le 11 Bistrot Gourmand, a contemporary urban bistro that has earned a Michelin Recommended distinction. The restaurant’s philosophy is built on three pillars: Travail, Qualité — work and quality, married harmoniously in every dish. Chef Charpy’s cooking is rooted in the market, changing with the seasons to create “plats appétissants” that are both honest and refined.
The kitchen at Le 11 Bistrot Gourmand is all about cuisine maison. Every plate is prepared with fresh, seasonal produce, and the menu adapts to what the market offers. For lunch, there is a dedicated ardoise déjeuner (lunch slate) available weekdays, while a more extensive ardoise dîner slate is offered for evening service and Saturday lunches. The chef also prepares suggestions du moment that change regularly, subject to availability. Vegetarian versions of the slates are available upon request, and the team welcomes children with a dedicated menu for those up to 12 years old.
For those who want to enjoy the experience at home, the restaurant offers a takeaway service: dishes inspired by the current slates, ready to reheat. “Le restaurant à la maison,” they call it.
