The story
On the banks of the Loire, in the quiet village of Pouilly-sous-Charlieu, Restaurant de la Loire offers an experience that begins with a leap of faith: you will not know what you are about to eat. The kitchen, led by chef Fabien Raux, works entirely on a blind-tasting basis. An indicative menu is shared, but the actual compositions shift daily with market arrivals and the harvest from the restaurant’s own kitchen garden.
Raux trained in the classical tradition and refined his craft alongside Michelin-starred chefs before opening his own address. His cooking is rooted in the Roannais terroir – precise, modern, and built on the integrity of the produce. The chef describes his approach as an “unforgettable sensory experience,” one that respects seasons and environment while pushing technique forward.
The restaurant offers several tasting menus, each named after the landscape. The three-course Déjeuner (48 €) is served at lunchtime only, midweek. For a longer journey, the five-course À l’ombre des Tilleuls (95 €) or the six-course Promenade Roannaise (105 €) unfold the chef’s narrative. The seven-course Bords de Loire (115 €) is the fullest expression. A special Première Table menu (100 €) is reserved for guests under 35. Every menu can be paired with wines from the restaurant’s cellar.
With 320 references and nearly 2,500 bottles, the wine list is one of the finest in the Roanne area. It brings together prestigious appellations and lesser-known gems. The dining room opens onto a terrace shaded by lime trees, and the property also includes the guesthouse Clos Marie. A private room is available for events.
