The story
At the Place du Marché, just 150 metres from the Grande Plage of Préfailles, Le Saint Paul welcomes guests into a cosy interior or onto a covered terrace facing the sea. Behind the stove is chef Maxime, co-owner with Johanna. His path passed through the kitchens of chef Eric Guérin and the George V in Paris, and he describes his cooking as “à chaque geste, une attention. Everything is made on-site from raw, seasonal products. The changing menu might offer a petit pois tartelette, line-caught lieu jaune, or a 48-hour confit pork belly. The pastry section, led by Eva, turns out desserts such as a tartelette choco Illanka Valrhona and a rhubarb tartelette. A vegetarian menu ensures the season’s best vegetables get their due.
