The story

The name itself—meaning "the little farm" in the local patois—is a direct homage to the rural roots of chef Florian Descours, who runs the restaurant alongside his wife Marine. Both are natives of Privas, and their restaurant feels like a true expression of their home.
The guiding philosophy here is clear and shared by the entire team: the product is paramount. La Bòria works with ingredients sourced from the Ardèche, following the seasons, with an estimated 80 to 90% coming from local, conscientious farms. This is not just a slogan; it is visible in everything from the bread baked on-site to the charcuterie made from pigs raised by a nearby farmer in Beaulieu. The approach is straightforward: good produce, well-handled, from the earth to the plate, at a reasoned price.
This commitment to the Ardèche has earned La Bòria significant recognition. It holds a Michelin star for high-quality cooking, as well as a Michelin Green Star for its sustainable practices. Gault & Millau has also awarded it three toques and named Chef Descours a "Jeune Talent."
The spirit of the region extends to the wine list, which has a strong local focus, and the cheese trolley, which celebrates the work of passionate local producers. La Bòria is open for lunch and dinner from Wednesday to Saturday, offering a refined yet welcoming taste of the Ardèche.
