The story
On the waterfront near the Port de Plaisance in Propriano, Chez Parenti has been a fixture of the Gulf of Valinco since 1935. For generations, the Parenti family has upheld a culinary tradition rooted in quality, drawing on the island’s finest ingredients. Today, chef Sébastien Quignion leads the kitchen, bringing his experience to the service of the restaurant’s enduring philosophy: products from the land, fresh fish from the gulf, and lobsters from the vivier.
The menu is a testament to this commitment. Starters include a classic soupe de poisson, made with rockfish from the gulf and a grandmother’s recipe, and a terrine of duck foie gras from the Landes, paired with Muscat du Cap Corse and a myrtle onion confit. The seafood is the star, with specialties like the Mediterranean lobster, langouste from the vivier roasted in the oven, or the catch of the moment—a fillet of local fish pan-fried with laurel butter, served with a saffron beurre blanc and risotto with sartenais cheese. For those who prefer land-based options, the braised veal from Abbatucci and the 16-hour confit lamb are equally compelling.
The dining room is complemented by a cigar cave and a whisky selection, and the wine list rounds out the experience. The restaurant’s dedication to quality has earned it a place in the Michelin guide, a recognition that aligns with its long-standing reputation. Whether for lunch or dinner, with outdoor seating available, Chez Parenti offers a warm, concrete taste of Corsican hospitality.
