The story
Chef Mille is a decorated figure in French gastronomy—a Bocuse de bronze winner in 2009 and a Meilleur Ouvrier de France in 2011. After earning two Michelin stars at previous posts, he opened Arbane as chef-owner, offering a more accomplished and personal interpretation of his cuisine. His work here is an ode to the creative process, rooted in the imagination and brought to life through a deep respect for raw ingredients and the living terroir of Champagne.
The dining room, under the direction of Mélanie Arnould, is a sanctuary for the pleasures of the table, where every detail is carefully orchestrated. Pastry chef Arnaud Beck translates the inspiration of the place into sweet notes. For intimate events, the Fortel lounge accommodates up to 12 guests. The Vines lounge, a more private space, offers a pre- or post-dinner experience where head sommelier Valentin Gallais guides guests through a selection of the finest Champagnes and wines from other regions.
Menus are structured around the seasons and the chef's discoveries. The dinner-only "Ode à la vigne" is a six-course menu inspired by encounters with the terroir. The "Premier Cru" is a three-sequence market menu available at lunch, Monday through Friday. "Expression végétale" and "L'âme de la Champagne" are five-course options, while "Le Millésimé" presents six sequences of signature dishes, including coral langoustines and scallops. Each menu is available with wine or free alcohol pairings.
