The story
In Tinqueux, just outside Reims, L’Assiette Champenoise is a family affair. Founded in 1975 by Jean-Pierre and Colette Lallement, the restaurant has been led since 2000 by their son, Chef Arnaud Lallement, alongside his wife Magali in the dining room and his sister Mélanie, who directs the hotel. Their mother Colette remains a steady presence. This family spirit defines the house—warm, human, and rooted in a tradition of simplicity and conviviality.
Arnaud Lallement’s path to the kitchen began young, watching his father. After training with masters like Roger Vergé, Michel Guérard, and Alain Chapel, he took over the family restaurant. In 2014, his modern cuisine earned the ultimate recognition: three Michelin stars, a distinction the house has held ever since. It also ranks among the world’s best on La Liste.
Lallement’s cooking is built on authenticity and emotion. His guiding principle: “Eat real!” Each dish focuses on the essential—taste—by sublimating the product and maintaining a precise, balanced acidity. This acidity, a hallmark of his style, echoes the vineyards of his native Champagne. Over the years, he has simplified his ingredients, finding winning combinations through exceptional technique that hides behind apparent simplicity. He sources from producers and artisans across France, treating the country as one large vegetable garden.
