Le Millénaire offers a range of degustation menus served “à l’aveugle” — without revealing the composition in advance. The midday option, La Douzième Heure, presents an entrée, plat, and dessert for €75. For deeper exploration, L’Antique (4 expressions, €100) and L’Ancestral (5 expressions, €150) unfold over lunch or dinner. The vegetarian La Flore (5 expressions, €130) showcases the kitchen’s respect for produce. The full Le Millénaire menu (7 expressions, €190) and the evening-only L’Atemporel (9 expressions, €240) are the most complete journeys. Each can be paired with wines and Champagnes selected by the team.
