The Kitchen and Its Founders

Cope brings a refined bistro cuisine to the heart of Rennes. Clément Couture and David Pellerin launched the space after honing their skills in the IMA kitchen, while Agathe Robert joins them as sommelier and barista. Their approach centers on market driven cooking that shifts with regional harvests. Every dish begins with a conversation about what local producers delivered that morning.

Seasonal Plates and Fermented Touches

The bistro kitchen translates these daily deliveries into plates that balance precision with comfort. A chilled tomato water granita carries balsamic caramel and pickled watermelon, while roasted eggplant swims in a light soy and ginger broth finished with fermented apricots. Yellow pollack arrives flash seared beside beet purée and a sharp lemon chili jelly. Basil mascarpone crowns arugula sorbet alongside peach compote and homemade granola.

Tea Salon and Terrace Dining

The space functions as a dual purpose venue that welcomes guests for a quiet morning coffee or a full evening meal. A generous outdoor terrace opens during warmer months for counter dining or standard tables. The interior keeps things simple and uncluttered so the focus stays on the food and conversation. Staff move through the room with a steady rhythm that avoids rushing anyone out the door.

The now-closed Bercail has found some worthy successors! Running Cope (a contraction of Clément Couture and David Pellerin’s last names) is a brilliant duo – the two friends used to work in the kitchens of IMA (Julien Lemarié) before taking over this classy, contemporary joint alongside the talented Agathe Robert (a sommelier and barista). On the plates, only very good things, from snack time through dinner, sourced as locally as possible! The night we went, we enjoyed: tomato water granita pimped out with balsamic caramel, fresh tomatoes, smoked oil, fermented tomato ketchup and pickled watermelon; truly delightful eggplant with fermented apricots and peanuts, plunged into a soy, ginger and garlic chicken broth; unbeatable flash-seared yellow pollack and beets prepared as purée, pickles and poached in broth, plus beet greens, cherries and a lemon chili jelly; before a dangerously good dollop of basil-infused mascarpone atop arugula sorbet, peach compote, fresh peach and some really delicious homemade granola. At snack time, there’s fig tart and fromage blanc, or pavlova with nectarine and charred bread. // Catherine Jamon
