The bistro kitchen translates these daily deliveries into plates that balance precision with comfort. A chilled tomato water granita carries balsamic caramel and pickled watermelon, while roasted eggplant swims in a light soy and ginger broth finished with fermented apricots. Yellow pollack arrives flash seared beside beet purée and a sharp lemon chili jelly. Basil mascarpone crowns arugula sorbet alongside peach compote and homemade granola.
