The Chefs and Their Journey

Chef Noé Viviès and front of house lead Lucy Rosedale established Jozy, a carefully curated bistro in Rennes after years of international training. They developed their culinary voice across Mexico, Japan, and Paris before settling near Rue Vasselot. Previous tenures at establishments like Magma and Cendrillon now inform every operational choice. The recent Le Fooding selection validates their commitment to grounded cooking over theatrical presentation.

The Kitchen and Signature Plates

The five course menu balances regional French products with quiet global references. A delicate dashi broth with sweet corn opens the service, followed by praires clams tossed in tequila, jalapeño, and chives. Raw bluefin tuna from Loctudy rests in fermented pepper sauce alongside fresh shiso leaves, while dehydrated beets pair with cured guanciale and mizuna. Every plate arrives on handcrafted ceramics from Studio Four, grounding the modern bistro approach in tactile simplicity.

The Room and Service Vibe

Inside the former Faubourg location, an almond green facade frames exposed stone walls and a light wood counter. Guests gather around the bar for direct interaction with the open kitchen. Roasted Coucou de Rennes chicken arrives with smoked potato purée and black garlic, finishing the evening alongside a shared hojicha crème brûlée. This neighbourhood bistro model keeps the energy focused on honest preparation rather than spectacle.

No more globetrotting! After honing their craft in Mexico, Japan and then Paris, Lucy Rosedale (ex- Cendrillon and Au Passage , front of house) and chef Noé Viviès (ex- Magma and Pluto ) have finally put down their suitcases and settled in the historic center of Rennes. Inside what used to be Faubourg – which has had a stylish lick of paint for the occasion (almond-green facade, exposed stone walls, light-wood counter) – resistance is futile in the face of the captivating dishes (served on ceramics by Studio Four) that make up the refined yet incredibly vibrant five-course menu: a delicate dashi broth with corn to set the tone; praires clams sautéed in tequila with jalapeño and chives; sublime raw bluefin tuna from Loctudy, bathed in fermented pepper sauce with a touch of shiso; incredibly tender dehydrated beets decorated with guanciale, goat cheese and mizuna; barbecued Coucou de Rennes chicken served with smoked potato purée, kale, black garlic and a chicory jus; before ending with a smoked hojicha crème brûlée to share – thought we would have gladly kept it all to ourselves. · Églantine Dupont
