Chef Joris Lebigot joined founders Darry and Rosemary Girard-Macé to revitalize this landmark near the Parlement de Bretagne. Their recent recognition by Le Fooding reflects a menu built on precise execution rather than trend chasing. Lunch service opens with a butternut squash hummus layered with pickled carrots and coriander.

Evening plates and regional echoes

Dinner shifts toward cross-cultural flavors anchored in local proteins. The Asian-inspired fried chicken pairs perfectly with Chouchen mead, while pan-seared mackerel rests in a chocolate-chili mole reduction. Traditional French preparations remain central, featuring stuffed cabbage and a vol-au-vent packed with chicken and veal sweetbreads. Clean acidity cuts through heavier elements.

Darry (ex- Tire Bouchon , the pioneering natural wine bistro in Rennes) teamed up with Rosemary Girard-Macé to update Le Nabuchodonosor, a Rennes institution right near the Parlement de Bretagne. And this new iteration of a classic spot promises beautiful feasts! In the kitchen, Joris Lebigot (ex-Bristol and Daimant Collective) bistronomizes everything he can get his hands on: at lunchtime, think creamy butternut squash hummus seasoned with pickled carrots, coriander and pumpkin seeds; pearly gurnard, a divine rockfish soup and roasted zucchini; and fromage blanc with stewed squash and speculoos for the seriously tasty dessert. At night, the plates are inspired by the chef’s travels, like the Asian-style fried chicken with Chouchen mead; the mackerel in mole (a chocolate-chili sauce); Frencher options like stuffed cabbage or vol-au-vent with chicken and veal sweetbreads…. And for early risers, there’s a breakfast menu option featuring bread and viennoiseries from the 16h30 pastry shop, plus butter from Thierry Lemarchand. // Catherine Jamon
