The story
Opened in 2019 as part of the renovation of Rennes train station, Le Paris-Brest reimagines the grand station buffet. Designed by Patrick Jouin and Sanjit Manku, the futuristic space seats 130 guests and offers views of the city and railway lines through its glass facades. The atmosphere is both comfortable and convivial, a modern setting for a bistronomic take on Breton cuisine.
Chef Christian Le Squer, a celebrated figure in French gastronomy, describes the project as an honour: to reveal the treasures of Breton terroir to travellers passing through. The kitchen focuses on fresh, local produce, with a seasonally changing menu that prioritises quality and original flavour combinations. Signature dishes include confit and caramelised pork belly with braised cabbage, a refined pâté en croûte of poultry and foie gras, and, of course, the restaurant’s namesake Paris-Brest—a contemporary interpretation of the classic choux pastry ring.
The wine list, curated by master sommelier Eric Beaumard, explores both celebrated appellations and lesser-known corners of the French vineyard, chosen to complement the precise, savoury cooking.
Open every day from 7am, Le Paris-Brest serves breakfast, lunch, a reduced snacking menu in the afternoon, and dinner. The à la carte and market menus change with the seasons, and a takeaway formula is also available. This commitment to accessible, high-quality modern cuisine has earned the restaurant a Michelin Recommended distinction, marking it as a destination in its own right within the station.
