The story
In the heart of Esparron-de-Pallières, a tiny village in Provence Verte, Bistrot École opened in November 2019. The name is literal: the restaurant occupies the former village school, a blue-shuttered building from the early 20th century that had sat empty since 2004. When Alima Louange and chef Grégory Brousse arrived from Camargue, they saw more than a building—they saw a place to bring life back to a 370-person village.
Grégory Brousse, previously chef at the Mas de Peint in Camargue, and Alima Louange run the restaurant as a true partnership. Their cooking is grounded in local sourcing: they work year-round with a tight network of producers from the nearby Pallières area—lamb from La Ferme des Bréguières, vegetables and eggs from Plumes et Légumes, goat cheese and meat from La Ferme des Jovents. The menu changes weekly, following the seasons, and stays deliberately short: four starters, three mains, four to five desserts. This is modern cuisine that lets the ingredients speak, without fuss.
The dining room retains echoes of its past—school chairs, a long counter, banquettes on pallets—but feels cozy and relaxed. In warmer months, the shaded courtyard terrace is the place to be. The wine list, carefully built around independent growers, includes both celebrated appellations and lesser-known local cuvées from vignerons like Myrko Tepus and Domaine Léon Barral. The Michelin Guide has recommended Bistrot École, recognizing the precision and honesty of the cooking. Dishes like confit lamb shoulder with creamy polenta or a chocolate-tonka mousse with salted caramel biscuit have drawn praise in the French press for their clarity and depth.
Bistrot École is more than a restaurant. It also serves as a café and a small épicerie—the only commercial life in Esparron. Alima and Grégory have created a place where locals and visitors alike can find a genuinely good meal, a glass of wine, and a welcome that feels natural. No gimmicks, no nostalgia—just a schoolhouse that found a second life.
